What Makes Birria Special
Birria originates from Jalisco, Mexico, where it was traditionally made with goat. Today, beef birria has become the standard, and ours is braised for hours in a rich blend of dried chilies, garlic, cumin, and oregano until the meat is fall-apart tender.

The tacos are assembled, then pressed on a griddle that's been brushed with the rendered fat from the braise. The result? A tortilla that's crispy on the outside, soft inside, and packed with flavor all the way through.
