What Is Mole?
The word "mole" comes from the Nahuatl word molli, meaning sauce. But calling mole a sauce undersells it dramatically. Our version contains over 20 ingredients — dried chilies, chocolate, spices, nuts, and more — all toasted, ground, and simmered low and slow until they become something entirely their own.
The Secret Is Time
There are no shortcuts with mole. The chilies must be toasted until fragrant but not burnt. The chocolate — we use high-quality Mexican dark chocolate — melts in at the very end, adding depth without sweetness. The whole process takes the better part of a day.
